Apple and pretty much everybody else uses Transport Layer Security Public Key Infrastructure; TLS PKI. This is the foundation of mail server connections, of HTTPS connections, of iMessage, of app updates and distribution, and pretty much everything else occurring over the ‘net.

Which is a secure end-to-end tunnel mechanism that seeks to authenticate the server identity, and can be used by the server to identify the client as well.

Ubiquitous TLS and insecure Wi-Fi warnings and related details do tends to be mechanisms that the oft-overhyped and “under-privacied” first-few-hops commercial VPN services can fail to mention in their marketing materials. The commercial first-few-hops VPN services are something I deeply mistrust.

For some of what else Apple has implemented: https://help.apple.com/pdf/security/en_US/apple-platform-security-guide.pdf
