Can anyone give me a detailled answer about my issue , If i leave my family storage plan and my data is above the free data plan so will my data be deleted which is greater than that , I know I won’t be able to upload more but will it effect my old backed up data , and what does apple mean by i wont be able to use apps which works with icloud

It will delete anything above 5GB.
You will be able to use apps, but they won't be able to store anything in iCloud.
Download and backup locally anything you want to keep.
