If you look at the Voice Memos app, are you missing any voice memos?

How about the Files app, are all of your files there?

If you aren't missing any of your items, then the additional data could have been temporary and associated with the transfer process when setting up your new iPhone.

If you are missing any of your items, then you'll want to contact Apple Support to let them know what happened.
