I have been trying to unlock my old iPhone 7 plus. I have forgotten my old passcode. Now it is disabled and telling me to connect to iTunes. With the Mac desktop updates iTunes is no longer on the iMac desktop. My old iPhone is not connecting to wifi. Is there anyway to unlock my old iPhone without losing my stuff on the iPhone?

No. While it can be restored in the Finder, doing so will erase everything on it; this also applies to using iTunes on PCs and older macOS versions.
There isn't any way to recover the data from a disabled iPhone.
