I tried setting up esim for my iPhone 14 Pro max and I can't find the Add esim or Add data plan or Add cellular plan.
I have reset the phone and tried everything

You didn't mention that you already contacted Apple Support, what did they say when you did? And what did Airtel support say when you contacted them? And is this a carrier unlocked iPhone?
My iPhone 14 pro max doesn't have the Add cellular plan option. I cant add esim
