iPhone 11Pro, 15.6.1 iOS. After I send a text message to a friend that I have not spoken to in a while, the next time I open up my text message, the person's contact is no longer there. It just shows the number.
My iCloud storage and Phone storage are plenty to hold these contacts.
I'm afraid this will happen to a contact someday and I will not realize it until it is too late to retrieve the phone number.

To start, is the contact just disappearing from the Messages application? Or is it also no longer listed under your Contacts section in the Phone app?
If the contact is just disappearing from the Messages app, try restarting the device.
If the contact is also disappearing from the Contacts section of the Phone app, then you'll want to see if you currently have your contacts set to sync anywhere. Go to Settings > Contacts > Accounts and see if the contact sync is currently turned on for any accounts you have set up on the device. If it is, try refreshing the connection by turning the contact sync off for a few seconds, then back on.
After doing that, test it out to see if the contacts are still disappearing after messaging them.
