The system requirements for the HP Smart Tank 6001 All-in-One indicate minimum macOS 10.14 Mojave:

At least according to this datasheet, the printer supports AirPrint. The AirPrint technology is per se compatible with some earlier system versions. However, an HP Smart application also seems to be used for setup and ink management purposes, and this app needs macOS 10.14. Further requirements may depend on ink agreements. So, any Smart Tank 6001 printer use with a Mac operating system earlier than macOS 10.14 would probably be entirely experimental. You would have to contact HP for details.
