I got weird symbols results after using Google to search with Safari, this happen only with Safari

That's that language appearing in the website you visited.

In that site, you can get the English language by clicking on "ENG" (in the top-right corner)

Most likeky, that's a glitch in that specific website's aspect.

To reproduce your "issue" I've used my Windows PC with Firefox, and this is the result (not related to your iPhone or Safari):
