I am thinking of buying a Macbook Pro 14-inch M1 (2021) 1TB SSD.
I have an internal Dell EMC 3.84TB 2.5" SATA SSD (pic attached) and was hoping to be able to put it in an enclosure and use it as an external with the new Macbook. Would this be possible and how would I connect it?

Yes. You an buy a USB enclosure to put it in and connect it with a USB to USB-C adapter to the Mac.
in addition to Phil0124's advice, after you install the drive in an enclosure, you will need to erase and format it.

I thought it may have been more difficult than that as I am confused by the term thunderbolt/USB-C ports.
Nope. Quite straight forward. The Thunderbolt 3 ports can be used as standard USB-C ports, no issue there.
