The How to scan documents on your iPhone or iPad resource you're posting from has all the information available on scanning from your iPad. There isn't a way to natively change the DPI of your scans. In this case you may want to look for a third-party option in the App Store that meets your requirements. Alternatively you can leave feedback regarding your experience here: Product Feedback - Apple
