I upgraded to iOS 16.1 (now 16.1.1) and my email stopped auto-fetching. The only way to get new email is to manually pull down and refresh in the iOS mail app. This is for all gmail and imap accounts. Unless I do it manually, the last update time will be hours before when I last manually refreshed. I have made sure that Fetch New Data for each account is set to Fetch and not Manual. Push is also enabled in the Fetch New Data settings.

Try a New App Password:
Try creating a new App Password. Your App Password may need to resync - something typical after update installations. You would log in using that password, rather than your Gmail password. See if it then works. Go here for gmail: Sign in with App Passwords - Google Account Help - Google
How often do you have the Fetch activated? Every 15 minutes? Every 30 minutes? etc?
To Double Check, open Settings ➡️ Mail ➡️ Accounts ➡️ Fetch New Data ➡️ Fetch: Scroll all the way down and ensure that a frequency time is picked, such as 15 minutes.

I would set it to Push if your account allows it.
Or remove the account and add it back.
If it is set for Automatically, then it will only fetch when the iPhone is connected to Power and a Wi-Fi Network. Try setting it to a fixed interval as recommended in my response above.
