Press the option key and the duplicate File menu item (where offered) will change to Save As… or, in the case of Pages, it is either that option key modifier, or option+shift+cmd+S keyboard shortcut. That might be different in other applications.

If you mean you want Save As… back to the decades long keystroke of Command+Shift+S, yes, you can do that. After many, MANY folks complained to Apple about the unwanted changes to the file menu in Lion, they provided a way to put things back to "normal". But it did require discovering it on your own.

It's kind of a long post, but the gist is you simply add a keystroke in the System Preferences. I've been doing this since Mountain Lion. Still works all the way through Ventura.
