You need a third-party app to sync the data to a Mac, as Ruder pointed out. All built-in ways to share Health and Fitness data are very restrictive for privacy reasons. You can share selected Health data with clinical studies or your doctor, and Fitness data with training partners, but none of these options will allow you to view your health or fitness data on your own computer. I am simply taking screenshots of the data I want to see on my Mac. The screenshots are syncing with iCloud Photos to my Mac and the Life Text feature allows me to copy and paste the text from the screenshots into Numbers.
