I used the new feature to schedule an email for later delivery in iOS 16. Then I went back to edit it, found I could not, then I decided to unschedule it (that’s easy in the header of the email.). Doing so the email has now disappeared, I can’t find it!
It was a long email and I’d hate to have to rewrite it… It’s not in trash, drafts, sent, outbox, or anywhere else that I can think of. I search for it, and it does not register in the search results.

If you are unable to find it in Drafts or your Outbox, there isn't a way to recover it.
