Why do some of my downloaded songs and albums keep disappearing from my phone?
Every time I go to play my music, which isn’t very often, I can’t because it’s no longer loaded and I have to re download it all over again, and again, and again, etc, etc.

Based on what you're describing, it sounds like you may have a specific setting on which can cause this behavior. The setting is located in Settings > Music > Optimize Storage.
If this setting is currently enabled, it's expected that your device will remove music that hasn't been played in a while when storage is needed for other things.
