Because it needs an update. But when the update is done the watch resets and it loses its connection with the phoneWhat is happing?

First unpair your watch to also remove data and activation lock
Unpair and erase your Apple Watch – Apple Support (UK)
(this will create a backup too)
If it is no longer paired then do the Erase all data and settings option in that article.
Then set up your new watch
Set up your Apple Watch – Apple Support (UK)
If you are still in a mess then erase it again and set up without restoring the backup.
