When I connect my iPhone to my computer, it used to show up but now a dialog pops up saying "A software update is required to connect to <iphone name>"
The only update available is Ventura which I don't want yet.
The phone was recently updated to 16.1.1, the Mac is running Monterey 12.6

Are you referring to this? -> If you see "Software update is required to connect to your iOS device" on your iPhone, iPad or iPod touch
If your Mac says a software update is required to connect to iPhone or iPad – Apple Support (UK)
If so, you may need to update the software on your Mac in order for it to recognise your iOS device.
Click Install to download and install the software so your Mac can update or sync your iOS device.
It is just a small patch for macOS.
You won't notice that update by the way, it only lasted 3 minutes or so.
The Mac remains Monterey 12.6 and the iPhone remains iOS 16.1.1.

My dialog box was slightly different specifically naming my phone, but seems to have been the same. I didn't click install on the dialog but rather checked for updates. When I looked, I thougt the only software update in System Preferences was Ventura, but after your post, I looked again and saw in tiny letters "other updates available" whereupon I was able to install MacOS 12.6.1 ... but that did not fix the problem.
Ultimately I had to click on Update in the dialog which took a few minutes as you noted and didn't affect the version numbers.
