What are the update folders in my iCloud storage and can they be deleted? It is taking up more than half my storage space.

Under Settings > [your name] > iCloud > Manage Storage, you should be able to see what is taking up space in your iCloud storage broken down into GB. The grey section refers to "other" which simply means data that doesn't fall into one of the pre-defined categories.

One common cause of unexpected data usage would be the Files app or iCloud Drive. If there's files there that iOS can't categorize it would fall into the Other category.
