You can't change this on the iPhone, but your Wi-Fi router might have an option to assign separate names to the 2.4 GHz and 5 GHz networks.
So one network might be named 2.4 GHz WiFi and the other might be named 5 GHz WiFi
If your Wi-Fi router has this capability, you can simply connect the iPhone to either 2.4 GHz or 5 GHz signals by selecting the name of the network to which you want to connect.
