I just recently switched from a MBP 2019 to the 14" M1 MBP.
The old machine I could unlock with my apple watch, I can't find the settings tab in which this feature is being en- or disabled (Venture 13.1).

Try turning the facility off on the old Mac.

I assume it is on the same Apple ID
Turn on bluetooth and ensure the watch, iphone and MBP are on the same wifi
This it looks on my system:
Jep. AppleWatch and MBP are on the same AppleID, BT and WiFi is turned on on both devices.
The very same watch did unlock my last MBP just fine a week ago.
I completely wiped the old mac clean (with the MacOS tool). So I guess this feature was turned off, too.
