How do I remove an old defunct email address from my Apple ID which is getting mixed up with my emai for upgrades etc

Try going to settings, your name (ios 11 or later), name-phone-numbers-email, look for reachable at, and edit. Remove the one you want to remove. Note: you must have at least 1 other email that is not the one your trying to remove.
