Unpairing of watch during setup process

I’m trying to pair Apple Watch Series 3 with my iPhone 12 whilst my other Apple Watch is being replaced. It pairs initially, then asks me to set up as new watch or from previous. Whichever option I choose, shortly after the setup starts, it then unpairs. I have tried resetting Watch a few times as well as reset my phone network settings but no luck with pairing. Any suggestions?
