I use several gmail accounts and open them in the Mac mail app. One of these accounts has gone offline. I can’t figure out how to get it back online. The other gmail accounts are fine.

Go into Mail's Accounts settings pane and remove the problem Gmail account. Then add it back in again. See.if that won't jumpstart that account.
