I’m using Stage Manager with the sidebar set to hide. If I’m in an app like Safari in fullscreen I can’t swipe to bring up the sidebar as the same gesture is used to go back. Is there any setting I can use to bring up Stage Manager with a swipe while still having a “back” swipe gesture in this context?

I presume you seek the gesture to access the Stage Manager Recent Apps list - at the left-side of the screen…
Assuming that Stage Manager is enabled - and the Safari window has been expanded to full-screen - you can expose the Recent Apps with a very-short inward swipe from the left-edge of the screen; this will briefly reveal a black tab at the centre-left of the screen. While the tab remains visible, tap the tab to show the Recent Apps.
You should note that a longer inward-swipe from the left edge of the screen both performs the “back” gesture for the current webpage and exposes the black tab.
It sounds more complex than it is in reality; with a little practice, the gestures become second nature.

Currently there is no option to bring up the Recent app list with a swipe while in fullscreen.
