If the AirPlay icon is missing from your menu bar or applications, you'll want to make sure that you have Wi-Fi enabled on the computer and that the AirPlay device (Apple TV, HomePod, AirPlay compatible smart TV) is connected to the same network. This would also mean the same network band. So for example if you have a dual band network with a "Network Name 2.4 GHz" and "Network Name 5.0 GHz" band broadcasted, make sure all the devices are connected to the same band.
Keep in mind, if there's no AirPlay devices connected to the same network currently, then the computer will not display the AirPlay icon.
Stream audio and video from your Mac with AirPlay
If your computer and AirPlay devices are connected to the same Wi-Fi network, then you'll want to check for security which may be blocking AirPlay. If you have the computer connected through some sort of VPN, disable that. In System Preferences > Security & Privacy > Firewall, make sure that is currently turned off. If you have any sort of 3rd party security or antivirus software installed, try disabling that.
