My boyfriend purchased me the new Apple Watch SE with cellular and GPS as he was told in the source that it can work with Koodo. However we have just found out that Koodo does not.
Are apple planning to add Koodo? Or shall I switch my phone network ?

You have it kind of backwards. Cellular providers (I'm guessing that's what Koodo is) choose to support Apple Watch. Apple doesn't provide cellular services. Carriers do. At this point, you should contact your carrier to see if they have any plans to support Apple Watch, but your most likely best bet is to move your iPhone to a carrier who does support Apple Watch, if you want cellular service on your watch.
