Apple I watch pairing

I am trying to pair my series 3 Apple Watch with my iPhone 8. My wifi and Bluetooth are on. I get through the initial steps with my watch and phone which are on their chargers fully charged. My watch app appears on the phone but not my watch itself and I have a notification on it that asks me to update to watchOS 9.2 once it starts pairing the two electronic devices. It almost updates completely but then stops and keeps asking me to redo the software update date. How do I fix this?

Did the previous uset/owner unpair and erase it?

Can you erase it like this...

  1. Put your watch on its charger and keep it there until you complete these steps.
  2. Press and hold the side button until you see the power button in the upper-right corner of the display.
  3. Press and hold the Digital Crown until you see Erase all content and settings.
  4. Tap Reset, then tap Reset again to confirm.
  5. Wait for the process to finish, then if necessary set up your Apple Watch again. When asked, restore from a backup.

Erasing all content and settings erases all media, data, and settings from your Apple Watch, but it does not remove Activation Lock if it has one so if it has then you need the password,

Hi, thanks for your response. I did try what you suggested and I did see earlier in the day that series 3 couldn’t update OS 9.2 but without being able to update the watch app automatically unpairs or retries to update. I tried all these methods to no avail. Any other ideas? This is very frustrating as I received the watch as a gift and was trying to set it up for my dad who is in his eighties.
