So I recently bought a $25 digital apple gift card from Amazon to buy some stuff on a game, I redeemed the card and everything but when I try to buy the thing (it’s only $5 I have enough for it) it tries using my old visa gift card which has no money on and and it wont let me remove the old visa gift card payment method. Please help.

When redeeming a gift card, (1) the amount will be credited to your Apple ID balance and (2) then you need to set your Apple ID balance as your default payment.

(2) See -> Add a payment method to your Apple ID

If you update your payment method or add funds to your Apple ID balance, It would take about 1 to 3 business days in order to process.
If you're still unable to update your payment method, Contact Apple Support.
