I understand that by "Reset" you mean to delete all data on your iPhone and return it to factory settings. I also understand that you would like to keep the eSIM active on the iPhone.

Open Settings ➡️ General ➡️ Transfer or Reset iPhone ➡️ Erase All Contents & Settings ➡️ Continue: Note that Before erasing, you will be given the option to keep the iPhone active on your eSIM or you can remove the eSIM.
