I have a GIF with sparklers and happy 2023 texted to me and I cannot delete the text. Very confused.

Try Deleting in Messages in iCloud.
Access your messages on your computer through iCloud. Then, delete it from the computer. Go here: Use Messages in iCloud - Apple Support

Deleting a Text Message:
