I get this msg when trying to pair: your iphone and apple watch are unable to sync data for apps such as mail and activity. to continue syncing data with your iphone, make sure your apple watch is on the latest version of watchos

how can i update my new apple watch before i par it with my phone ? this does not make sense...

Your iphone should first be on iOS16.2 then try again.
