Finder Preferences
Okay brains trust. Why, oh why can I no longer add Applications to the Finder sidebar? I have it selected as you can see in the photograph.
I'm on a Mac and everything is updated and re-booted.

Open a Finder window, hover your pointer on Favorites to Show or Hide all.
go to > Customize the Finder toolbars on Mac - Apple Support
Scroll down to “Customize the Sidebar” and look at “Show or Hide all the items in a selection of the sidebar:

That Finder settings pane only refers to the Applications folder, not actual applications.
Applications is on the Sidebar.
Use Applications from the Sidebar to open any App or your Dock to access preferred App’s.

Perhaps the arrow is turned and the sidebar Favorites are Hidden?
