Overnight charging with optimized charging enabled is the best practice. It allows your phone to automatically back up every night.
When to charge your iPhone or iPad - Apple Community
Note that, even if you don't have optimized charging enabled, the phone stops charging when it gets to 100%. There is absolutely no need to hover over the phone and unplug it as soon as it reaches 100%.
