I never use Apple mail. I do use online Gmail. Now my Apple mail is not even working properly.
How can I permanently remove the Apple mail on my Macbook desktop?

Apple Mail is baked into the macOS—you are not going remove it. You don't have to use it, simply ignore it.
If necessary change the setting in Mail>Settings>General>Default email reader
Log out of or remove email accounts in Mail on Mac

Thanks. I can't even launch the mail app. When I try to launch it starts sending out message windows by the hundreds! I have to force quit it. So how am I going to get it to open so I can do what you recommended?
