My number was blocked, and I received a text from that person out of the blue. Is it possible the text was old?

I was blocked by a friend quite a while ago. However today I received a text from him and the context seemed like it was ages old. He quickly unsent the message. But Im still confused about the timing and subject matter. Is it possible that he unblocked me (months later), and an old text he sent way back then made it to my phone just today?

If your friend has "unsent" the message, it was sent shortly before you received it. Messages sent via iMessages can only be withdrawn within a short period of time.

Also note that even if your friend has blocked you, the person can still send you messages. Only you cannot send messages back to the person. But of course there is also a chance that your friend has unblocked you.
