How to properly hear voicemail messages and prompts? With my old Android phone, it was very loud. With this iPhone 12, I have to hold it by my ear, and I'm unable to type in my options. Really awkward, to say the least. Is there a way out of this mess?

Depending on your carrier, voicemail options may vary. See if you can locate 'hide keypad' option. Regarding speakerphone, when you start playing a voicemail, you should see a Speaker icon on the right (next to the blue phone icon and the red trash icon). Tapping that should play your voicemail through the speaker.

When I go into Voicemail, the ONLY option I have is "Call Voicemail". Following that, I do see an option "hide" (no explanation of what I'm trying to hide). Upon tapping hide, I do finally have the option to activate the speakerphone. By that time, I have missed a bit of the prompt (having to listen to it all before it plays all over again). My previous [Android] phone was SO MUCH efficient to use. I'm sure Apple could do much better. I'm disappointed quite a bit.
