iPhone stolen unlocked, what measures to take.

My phone was recently snatched out of my hand while unlocked. First thing the thieves have done is remove it from FindMy iPhone.

I have managed to freeze the SIM (the phone isn't carrier locked however_ and regain access to my Apple ID. The phone is not showing up on the devices list when logging into my Apple ID.

Is there any chance my iCloud notes, photos etc are still being shared with that phone? Are there any other measures I should take?

They couldn't have turned these two things off, Not without your passcode, I already tried that on my phone. You have to enter your passcode!

The first thing they did was reset the passcode and face ID.

They reset the Apple ID password.

I know for a fact they managed to reset face ID because they accessed my banking apps and crypto wallets which is face ID only.

It's possible to reset the passcode with access to the Apple ID.
