The current SSD's read/write speed have taken a huge leap -- RAID 0 (strip) usually would require 2 drives for the "strip" process. The current individual Mac (Mac Mini specifically) only has 1 physical drive -- in short answer for your question -- no, and current Mac internal SSDs are very impressive.
If you really want RAID 0 (which I am not a fan of RAID 0 - due to possible data corruption; RAID 5 or RAID 10 are better choices) - that you have to resort to "external hardware solution/multiple-drives enclosure" via Thunderbolt connection. Personally, I have not tested these RAID in Mac. Once again, the internal SSDs in my M1 MacMini/M1 MacBook Air/14" MacBook Pro are extremely fast and reliable, all with 512Gb.
