Unpair Watch

I got a new phone (14 Pro Max). I need to unpair my Apple Watch from my old phone (11). When I go to the watch app on old phone it only has the option to pair a watch. My watch doesn’t appear so that I may unpair it. When I try to pair existing watch to new phone it tells me it is unable to connect to Apple Watch. I don’t know what else to try.
