Remove 1.5GB of email data from my iphone backup

I love my iPhone 7 but don't want to pay storage costs. I have 1.5GB of data in my email backup. How do get rid of this, please? I have deleted the email app from my phone, tried multiple backups and restarted the phone but the data is still there. How can there be email data when no email? How do I delete this from my backup, please? I have a connected Windows 11 machine. Is this affecting it in some way?

Done. I had over 3000 emails in sent mail of my iCloud email that were over 2 years old but not deleted. Nothing to do with my phone but email on the iCloud account.
