So my iPhone 11PROMAX has been smashed and my screen is acting out to the point that it input the incorrect password so many times it blocked it.

What I want to know is if there's a way to unlock it after the fix without erasing data from my apps.

I have messages on my Whatsapp from my friend that's passed which I'm not ready to let go of and I'm hoping that I won't lose those messages.

No, in fact you must erase the phone, so all of the apps and data will be gone. The phone will look like it did when it was new.

However, if you have a current backup of the phone, you can use that to restore the phone so it will look like it did before.
