If we understand correctly, your apps and other services that depend on an internet connection don't work when you're using cellular data only. If that's right, start with checking your cellular settings to make sure those apps and services have access to your cellular data. If that's not the case, let us know more to help:
- Software updates recently released, which software version shows in Settings > General > About?
- When you notice cellular data not working, do any alerts appear? If so, what do they say?
- Do all apps that need internet access experience this behavior, or only some?
