I've tried Preview 'Help', but no advice available.
Is it possible to select text in a Preview document, and paste it into a Pages document ?
Any advice gratefully received.

It depends on the document. Some pdf files have text that you can do that with, others are more like photos and you would have convert the graphics to text before you could do it. One possible way is Live Text
