I recently switched to a new mac. Both with Ventura and the latest version of Numbers
When I opened the application on the other mac it showed me the icloud files directly.
With the new macbook it takes me to templates.
How do I get the old behaviour?

You cannot. The new Apps open to Templates. You can use the Open option in the File Menu to open existing documents and files.
