Apple Watch - double click of crown does not take me to wallet

Because I tend to use my iPhone to pay for things, I have only recently noticed that my Apple Watch series 7 (12 months old) doesn’t work when I double click the crown. My older previous Apple Watch always did, so I am baffled why this one doesn’t. I have read as much online as possible and tried various remedies but no joy. All that occurs when I double click the crown is that it takes me back to home screen. Obviously I can access the wallet from there but that seems a backwards step. Plus when I do access the wallet is keeps asking me to confirm additive touch which I don’t want to do.
