MacbookPro only recognizing one external display at a time

I have a MacbookPro with an external Dell monitor and a KYY portable monitor for a temporary WFH set-up. Yesterday, both external displays connected with no issues and I was able to work with all three displays (including the built-in on the laptop itself). Yesterday afternoon, I unplugged to work on my couch for a few hours and when I reconnected with the exact same setup (thunderbolt USB-C cables into the USB-C ports), only one external monitor showed in the Display settings. If I unplug one, the other will pop up and vice versa. I've tried every combination of different USB-C ports available, restarting, option + detect displays, but still only one of the externals will show at a time; I can't get both simultaneously.


Knowing that it was possible for both externals to connect at the same time yesterday, does anyone have any ideas on what might have changed/what I might be doing wrong today?

Use Software Update
Before following these steps, it's a good idea to back up your Mac.
1. From the Apple menu  in the corner of your screen, choose System Settings or System Preferences.
• If you chose System Settings, click General on the left side of the window. Then click Software Update on the right.
• If you chose System Preferences, click Software Update in the window.
2. Software Update then checks for new software. 
• If Software Update finds new software, click the button to install it. The button might be named Update Now, Upgrade Now, Install Now, or Restart Now, for example. You might then be asked to enter your administrator password.
• If Software Update says that your Mac is up to date, then no new software is currently available for your Mac model. Software Update shows only software that is compatible with your Mac.


If the issue continues, test and see if the issue is system-wide by testing with a different user account on your Mac. This may help to isolate the behavior. Check out those steps here: Add a user or group on Mac - Apple Support


Add a user
1. On your Mac, choose Apple menu  > System Settings, then click Users & Groups  in the sidebar. (You may need to scroll down.)
2. Click the Add Account button below the list of users on the right (you may be asked to enter your password.)
3. Click the New Account pop-up menu, then choose a type of user.
4. Enter a full name for the new user. An account name is generated automatically. To use a different account name, enter it now—you can’t change it later.
5. Enter a password for the user, then enter it again to verify. Enter a password hint to help the user remember their password.
6. Click Create User.
