With the latest update to Apple software on all devices, I get repeated requests to enter Exchange password. When I go to enter the password with Microsoft, it works only after I do the authentication and follow process to “reset password”. I reuse the same password and it lets me in, until I open my Exchange accounts. Apple - please help resolve this!

Remove the account from the device and re-add it. If that doesn't solve the problem, contact your Exchange administrator or help desk.

What about application passwords? Will that keep working?
If application passwords are being used for MFA (Multi Factor Authentication) along with basic auth as another auth mechanism, then when basic authentication is disabled, app passwords used for MFA will stop working too.

The issue may very well lie with the Exchange server, especially if you're experiencing the same problem on multiple devices.
It’s different Exchange servers. There is an incompatibility between Apple Mail app and Exchange. It only happened with recent update.
I've had no issues at all with Exchange accounts on the latest version of macOS, iOS, or iPadOS.
