Getting Data Off My Apple Watch

Hello. I recently lost my iphone while hiking. Before you ask, my location services were not turned on, nor was I signed into the cloud. Lesson learned (the hard way). I have a lot of data on my apple watch that I do not want to lose when I get my new phone. Any thoughts, suggestions, advice would be greatly appreciated.

Thank you.

Since you weren't using the cloud, you don't have backups, so another lesson will be learned. There is no way to get the data off the watch either.

When you purchase a replacement iPhone, you can start using backup through iCloud and make sure Find My is active on both devices. Then you can move the watch to the new iPhone and your watch will backup then. There still is no place to go to pull data off the watch. Backups are intended to keep the data on the watch, but selectively taking data off a watch is not a feature.
