My friend has a very old mac laptop, running OS 10.9.5. She is buying a used MacBook Pro running at least OS 12, maybe 13. Question: How to we get all the data and applications (including Word version 14) from the old laptop to the newer MacBook Pro? Can we somehow mount the old laptop as an external hard drive on the newer mac, and just move stuff over that way?

I'm not the best person to give advice on the rest of your question, but be aware that Word version 14 will not run on any Mac running OS 12 or later.
Microsoft does not provide free upgrades between major versions of their Office products (unless you subscribe to Microsoft 365) and older versions of Office are not compatible with macOS Catalina, Big Sur, Monterey or Ventura.
If you have a version of Microsoft Office that is not compatible, you can either subscribe to Microsoft 365 or you can make a one-time purchase. See: https://www.microsoft.com/en-us/microsoft-365/mac/microsoft-365-for-mac

I've always done it the hard way, using an external drive to move my Documents and Pictures folders and reinstalling apps. I'm not saying that's the best way or easiest way. I don't have any personal experience in other ways. The following may help: Move content to a new Mac - Apple Support

Regarding purchasing Word, it is only sold as part of Microsoft Office (one-time purchase or Microsoft 365 subscription). Apple Insider frequently has a very good deal. Yes, Pages is an option and it will open Word documents. There may be formatting differences. Personally, I'm not a Pages fan. It is quite different and takes some learning/getting used to but many people like it.
She has decide to purchase a new MS Word app. But the question remains, how to transfer data from 2010 MacBook Pro to a 2018 MacBook Pro. Is there a cable of some kind, where I can hook the two hard drives together, and move her documents over?
