I set up my new iPhone last night and everything is working except phone calls and text messaging. What did I do wrong?

Did you install a SIM?

(either a nanoSIM or eSIM on an iPhone 14)

More than a few posters here have overlooked that step.

That sounds like a carrier issue. Best thing you could try on your own is.

Settings -> General -> Transfer or Reset iPhone -> Reset -> Reset Network Settings
